Maple Glazed Sweet Potatoes

Preheat your oven to 400°F. While your oven is preheating, peel the sweet potatoes and then cube them into about 1-inch-wide, even pieces. Place cut potatoes into a large bowl.
In a smaller bowl, whisk together the olive oil, vanilla extract and maple syrup. Toss into the cubed sweet potatoes to completely cover each piece. Spread into an even layer in a shallow roasting pan or jelly-roll pan and bake for 45 minutes or until tender. Use a flat metal spatula to remove the potatoes from the baking pan and serve immediately.

Ingredients:
- 1 cup onion, finely chopped
- 1 Tbsp olive oil
- 1 cup unbleached white flour
- 1 cup yellow corn meal
- 1 Tbsp baking powder
- 1 cup milk (I used almond milk)
- 3 Tbsp olive oil
- 2 eggs
- 2 Tbsp honey
- 1 1/4 cups sharp cheddar cheese, grated (I used low sodium cheese)
- 2-4 jalapeño peppers, chopped
Directions:
- Preheat oven to 400 F
- Prepare an 8x8 pan with cooking spray
- Sautee the onions in the 1 Tbsp oil until just limp, about 5 minutes, and set aside
- Combine the dry ingredients
- Seperately beat together the milk, eggs, oil/butter, and honey. Add the milk mixture to the dry ingredients and mix until just moistened
- Stir in the onions, 1 cup cheese, and jalapenos
- Pour into prepared pan, top with the remaining cheese
- Bake 20-25 minutes or until top is crusty brown
